Place cranberries, apple, sugar, orange juice, orange zest, and salt in workbowl of a food processor fitted with steel blade. Pulse until cranberries and apple are finely chopped, stopping to scrape down sides of bowl as necessary. Transfer to serving dish and serve immediately, or store in an airtight container in refrigerator for up to a week. In a food processor, combine the orange zest and chunks, apples, cranberries and celery and process until finely chopped; be careful not to process too long because the mixture will become mushy.

  1. In a large saucepan, bring the water, sugar, vinegar, honey, orange rind, orange, cinnamon, ginger, and cloves to a boil, stirring, over high heat.
  2. Lower the heat and simmer for 2 to 3 minutes or until the sugar has dissolved.
  3. Add the apples, return the liquid to a simmer and cook, stirring occasionally, 10 minutes more
  4. Add the cranberries and cook at a low boil over moderate heat, stirring occasionally, another 10 to 15 minutes or until thick.
  5. Stir in the raisins and nuts; transfer to a medium sized bowl to cool.
  6. Cover and chill.

Transfer to serving dish and serve immediately, or store in an airtight container in refrigerator for up to a week. In a food processor, combine the orange zest and chunks, apples, cranberries and celery and process until finely chopped; be careful not to process too long because the mixture will become mushy. Cover and pulse with several on/off turns until finely chopped.
